After my cancer diagnosis, I could no longer go to work. But I still had so much energy. From having had an active and involved life, remaining in bed for extended periods was hard, and I needed to find an outlet. There were too many emotions swirling in me that I couldn’t process, and I found something to turn to: cooking.
I began dusting off all my cookbook collections and began cooking my way through cancer. I experimented with French, Japanese, Chinese, Mexican, Middle Eastern, Italian, and African. Something in me had sparked to life after the longest time, and I was hooked.
I took classes on AirBnB to brush up on my skills. I enrolled in an online cooking school to learn plant-based cooking. I earned a certificate as a plant-based chef. Cooking food was my emotional punching bag.
Throughout this period, where I was dealing with cancer, I was working through the emotional roller coaster I was on with food.
I took my anger and made it edible.
